본 연구는 환상박피된 포도 ‘캠벨얼리’ 품종의 과실 품질을 조사하고, 최소 수확시기를 설정하기 위하여 경 북 김천에서 개량일자형으로 재배된 8년생 나무의 주 간 약 1.0m 높이에 7월 5일에 5~7mm 폭으로 환상 박피한 후 7일 간격으로 과실의 착색, 당도, 산함량, 유기산 및 유리당을 분석하였다. 과피색은 환상박피후 14일부터 Hunter L, b 값이 급격히 감소하였고, Hunter a 값은 증가하여 무처리보다 약 14일 이상 빠 르게 변화되었다. 산함량은 환상박피후 14일부터 환상 박피가 무처리에 비해 빠르게 감소되어 수확기에 0.85%로 되었으나, 무처리는 1.10%로 높았다. 당산비 는 환상박피후 21일부터 빠르게 상승되어 수확기에 환 상박피는 15.1까지 증가된 반면에 무처리는 10.8로 낮 았다. 환상박피에 의하여 유리당 함량은 환상박피후 14일부터 과당과 포도당이 급격히 증가하였는데, 무처 리보다 약 7일 정도 빨리 증가하였으며, 수확기에는 그 함량이 각각 64.5mg·g−1FW와 61.0mg·g−1FW로 무처리 56.1mg·g−1FW와 53.7mg·g−1FW보다 높았다. 또한 유기산 함량은 사과산이 무처리에 비해 착색기 동 안은 빠르게 감소되었으나, 수확기에는 차이가 없었으 며, 주석산은 환상박피가 무처리보다 빠르게 감소되어 수확기에도 4.13mg·g−1FW로 무처리 5.96mg·g−1FW 보다 현저히 낮았다. 따라서 과피색 기준으로 환상박피 후 35일에 수확하면 신맛의 포도가 생산될 수 있기 때문에 당산비가 15 이상 되는 환상박피후 42일 이후 에 수확해야만 한다.


This study was conducted to establish the minimum harvesting time of ‘Campbell Early’ grape with girdling of 8 years old vines by the investigation of fruit quality. Girdling was performed as 5~7mm width at 1.0m height with a Y-trellis system on July 5th at Gimcheon, Gyeongbuk province. Skin color, soluble solids contents, sugar content, organic acid, and titratable acidity were analyzed every seven days period after the girdling. From 14 days after the girdling, pericarp color changed quickly as compared to the control, and also decreased b value and increased a value of Hunter L were observed. The content of organic acids decreased quickly as 0.85% as compared to the control’s one, 1.10%. Sugar-acid ratio increased rapidly from the 21days as 15.1 against 10.8 of the control at harvesting time. After 14days, sugar content was abruptly increased such as fructose and glucose, that is 7days faster than the control. In harvesting time, their contents were high as 64.5mg·g−1FW and 61.0mg·g−1FW as compared to 56.1mg·g−1FW and 53.7mg·g−1FW of the control respectively. Among the content of organic acids, malic acid decreased quickly than the control’s one in coloring time. The content of tartaric acid was obviously lower as 4.13mg·g−1FW than the control’s one, 5.96mg · g−1FW in harvesting time. From these results, we assume that the harvesting of girdled ‘Campbell Early’ grape should be started in 42days after the girdling, when sugar-acid ratio is above 15.
