압출성형 메밀의 공정변수의 조절을 통한 메밀의 루틴함량 변화 및 압출성형물의 물성적 변화를 연구하기 위하여 스크루 회전속도(180, 220, 260 rpm), 배럴온도(80, 100, 120℃) 그리고 수분함량(15.0, 22.5, 30.0%)등을 달리하여 압출성형물을 제조 하였다. 압출성형 공정변수인 스크루 회전속도와 배럴온도에 의하여 영향을 받았으며, 스크루 회전속도가 증가하고, 배럴온도가 증가할수록 루틴함량은 감소루틴은 감소되는 경향을 나타내었다. 메밀을 가열처리한 루틴 정량 분석한 결과 루틴의 열 안정성이 확인되었으나 압출성형과정에서 스크루 회전속도와 배럴온도가 복합적인 작용에 의하여 루틴이 불활성화 또는 분자구조가 변화된 것으로 판단되었다.


The objective of this study was determined the change of rutin content in buckwheat through extrusion process. An extruded product was prepared by changing the screw speed(180, 220, 260 rpm), barrel temperature(80, 100, 120℃), and moisture content(15.0, 22.5, 30.0%). The rutin content was significantly influenced by screw speed and barrel temperature. It was decreased with the increase in screw speed and barrel temperature. Rutin content in buckwheat was not decreased by autoclave-heating buckwheat, the thermal stability of rutin was confirmed. It was concluded that there was an inactivation or the change of molecular structure of rutin by complex actions of screw speed and barrel temperature during extrusion process.
