Automatic vacuum packer consisting of pressing board, vibrating conveyor, and tape adhering assemblies was usedto determine vacuum-packing effect on embryo-retaining milled rice (EMR). Whiteness values of non-vacuum- and vacuumpackedEMRs decreased by 4 and 2, while moisture contents decreased by 1.3 and 0.8%(w.b.), respectively. Peroxide value ofvacuum-packed EMR increased gradually from 4.51 to 7.00 meq/kg, while that of non-vacuum-packed EMR increasedrapidly to 10.22 meq/kg then decreased moderately. Acid values of non-vacuum- and vacuum-packed EMRs increased, from1.84, to 3.22 and 2.62 mg/g, respectively.
