Structured lipids were sunthesixed bu esterification reaction of safflower oil and conjugated linoleci acid(CLA) in shaking water bath at 200 rpm for 24 hr at 55℃. Excessive free fatty acids were removed by deacidification with alkali refining. In this study, 26.45 mol‰ of CLA were incorporated into safflower oil. The major volatile compounds from safflower oil and SL-safflower oil were identified by electronic nose system and solid phase microextrction (SPME) method combined with gas chromatofraph-mass spectrometry(GC-MS).
