ABSTRACT

The present study was performed to analyze the content of physiologically effective ingredients and antioxidant activities of water and ethanol extracts (reflux extraction method) from the aerial parts of Vicia amoena for the possible development of nutritional foods and functional materials. The extraction yields were 25.5% and 10.93% for the water (WE) and ethanol (EE) extracts, respectively. The contents of soluble protein and reducing sugar in the WE were 46.97 mg/g and 97.61 mg/g, respectively compared to 52.48 mg/g and 68.01 mg/g for the EE. Total polyphenol compound and total flavonoid compound contents were highest in the EE (25.13 mg/g and 24.47 mg/g, respectively). Electron donating ability and superoxide dismutase (SOD)-like activities were also measured and shown to be highest in the EE (concentration 1.0 mg/g) with values of 94.52% and 20.54%, respectively. In the nitrate scavenging activities were also measured and shown to be highest in the WE (concentration 1.0 mg/g) with values 93.18% at pH 1.2. The collagenase activity of EE was 41.70% at 1.0 mg/mL. These results suggest that the aerial parts of V. amoena could be used ad an anti-wrinkling agent and antioxidant resources for functional foodstuff, cosmetics and beauty industrial materials.
